The burrs are 40mm conical steel, manufactured in Liechtenstein by Eztinger, and Baratza pairs them with a DC motor chosen for slow, cool, quiet operation rather than raw speed, backed by an automatically resetting thermal cutoff for long grinding sessions.
For espresso use specifically, the grinder ships with a 54mm anti-static dosing cup and a 58mm adapter, so grounds can go straight from the chute into most portafilter baskets in a level bed rather than a loose pile that needs redistributing. Baratza also redesigned the burr mount on this model for tool-free removal, which matters for maintenance since espresso-fine grinding tends to compact more residue around the burrs than coarser filter grinding does.
